Starch and glycogen contain glucose which is important for our bodies, whereas cellulose isn't as easy to break down; it is very insoluble.

Reason for the usage of starch and glycogen as energy storage molecules and cellulose for support and structure is :

starch and glycogen can be easily digested by organisms, while that of cellulose cannot.

The structure as well as shape of starch and glycogen give room for easy digestion by animal. With the help of starch-hydrolyzing enzymes the bond between α-glucose units can be easily be broken.

Cellulose is good for support because of it's structure because of the presence of β-glucose units. There is no enzymes that can break the bond between the units in animal and that us the reason that it is not easy to be digested.
